Last night my cousin KLW in Arkansas made we watch two movies on Netflix:
Fat, Sick and Nearly Dead and Dying to Have Known.
These movies are just great and I highly recommend them to anyone in need of a jumpstart to their life. KLW decided to take on a 60-Day Challenge of a strict juice fast.
There, it’s in writing so now she REALLY has to stick to it!
To encourage her in this journey I thought I would try it out with her in my own little way.
I decided I will replace at least one meal with juice, or in my case a smoothie.
I don’t have access to a juicer but for sure love the Vitamix!

With out further ado, take a look at my first creation:
1 whole beet
2 whole carrots
1 peeled orange
1 tbsp of ground flax seed
3 bushels of spinach
2 whole pears
2 whole (small) apples
(*all organic of course)
Unfortunately you cannot make this in most standard blenders, but the Vitamix or a juicer will do the trick!

She made the veggie version for herself for dinner and let’s just say she wasn’t thrilled with the flavor.
She said it resembled fresh cut lawn, then again how she knows what that tastes like is beyond me! Motivations for her to get in shape are a spring break strip to Cozumel and my May wedding - she’s my “not so matronly, matron of honor”... I am so excited, I miss her so much even though we talk nearly every day.

Her juice consists of these ingredients:
1/4 bunch of kale
1 pear
1 apple
1 whole peeled cucumber
1 carrot
1 thumb print size of peeled ginger
1 stalk of celery
(this made two 12-14 oz servings from her (CUTE!) juicer)
I have a feeling there will be a lot of back and forth photos of our creations I'll spare you the agony of enduring but for now, go ahead and use this as a challenge too. It's so important to get your fruits and vegetables every day as we all know. If not start this, at least step away from those processed and refined foods and sugar, eat less meat and dairy and drink tons of clean purified water! I wish 2012 to be everyones happiest and healthiest year ever!!
